I usually have some tofu left over whenever I buy it for some Chinese recipes. I use this to make some parathas for breakfast the next day or a light dinner. This is also a nice way to get my son to eat tofu. I add some carrots and spring onions which gives some burst of colour and extra goodness to these parathas. The following is the recipe:

(Note: Some babies may be allergic to soy products. Please avoid if that’s the case)

Ingredients:

3 cups wheat flour

1 cup crumbled firm tofu

1 grated carrot

4 spring onions finely chopped

2 tsps chilli powder

1 tsp turmeric powder

1 tsp chaat masala

salt to taste

1 tbsp sesame seeds (optional)

Water & Oil (as required for dough)

Method:

1) Combine all the above mentioned ingredients to form a dough.

2) Roll out the parathas and roast on the tava on both sides. Smear some oil/butter/ghee while roasting the parathas and serve.
